Late summer has to be one of my favourites times of year with all of the amazing fresh produce that is available and I particularly enjoy all of the field ripened tomatoes! One of the best, quickest and easiest way to enjoy all of those tomatoes has to be in BLTs! The kimchi and chipotle give them quite a kick, and the tempeh makes them hearty and satisfying. We’ve been nomming them all week.
