9. Low Carb Quiche with Mascarpone & Asparagus
This quiche is so good that I had it for breakfast, lunch and dinner. I think quiche looks much nicer when it has a beautiful long crust like this!
Initially, I wasn’t sure what type of quiche I wanted to make but since I had some mascarpone in the fridge I decided it to make it with that. I added some ham, mushrooms and asparagus to it and topped it with a bit of cheddar cheese. Mascarpone is one of my favourite cheeses on earth and it’s my favourite one to put in lasagna. It has such a nice flavour and goes well with any type of ingredients! I’m so glad I found some at a specialty store the other week.

8. Keto Orange Cake
This moist keto orange cake is made with almond flour and whole oranges – skins and all. It is low carb, gluten free and sweetened with stevia. I am totally in love with this flourless almond and orange cake!
However, it will always depend on the AMOUNT of orange (or any other fruit) you will eat. I would definitely NOT eat an entire orange in one go. But eating ⅙ of an orange, as you would with this cake, is perfectly low in carbs!

5. Keto Bread – Pork Rind Nearly No Carb Bread
A no carb bread is almost impossible to make. But, this low carb pork rind keto bread comes pretty close to being zero carb. There’s a ton of recipes out there like cloud bread and Soul bread which are very close to being the ideal no carb bread. But, one is a bit eggy and the other requires expensive whey protein.
After seeing a comment about pork rind bread on a Facebook post, I decided to give it a try. Unfortunately, I couldn’t find a good recipe for it so I developed my own keto bread recipe using crushed pork rinds.

First of all Happy Shrove Tuesday to all who celebrate! Nothing is more pleasurable for me on a Sunday morning than a nice warm pancake breakfast. But these pancakes I have made for shrove’s Tuesday. Shrove’s Tuesday is also known as worlds pancake day. Pancake day always falls 47 days before Easter. Shrove Tuesday is the day that precedes Ash Wednesday. The name Shrove Tuesday comes from ‘shrive’, meaning absolution for sins by doing penance. It is a traditional christians culture that they try to be ‘shriven’ before Lent. Christians would go to churches and confess about sins to priest. The bell rang to call them for confession is called pancake bell and its still rungs today.

1. Bacon Spinach Tomato Ricotta Frittata
Bacon Spinach Tomato Ricotta Frittata is an easy to prepare, low carb dish that is crust free, gluten free, primal and grain free. Especially quick to whip up if you have leftover cooked bacon on hand
This frittata is extra creamy from the ricotta, full of healthy spinach, and topped with some tomato slices. Almost forgot, did I mention there is bacon throughout? I used heirloom tomatoes, because I love the colors, but you can use any kind of tomato. I topped mine with optional grated cheddar after removing from the oven so it melts over the top. I also served mine with hot sauce, but I’m slightly obsessed with spicy sauces.
