9. Strawberry Spinach Sandwich and Salad
Two healthy lunch recipes that can be tossed together in 15 minutes or less; both the strawberry spinach sandwich and salad can feed a small crowd or pack up nicely for lunches and picnics!
We’re back with another variation of our 30 Minute Meal Series! So far Dietitian Stacie and I have teamed up to bring you breakfast in the form of a savory sweet potato, turkey sausage egg bowl + egg bake, made from the same wholesome ingredients {of course this meatless meal easily carries over into a dinner favorite too}. And dinner, lemon chicken with capers + garlic roasted veggies, a classic staple in both our households.

7. Lunchbox Deli Wraps
Back to school never tasted so good. These lunchbox deli wraps using Applegate Organics deli meat are easy to assemble, simple to create, and loved by kids (and adults too). Paleo and allergy-friendly ideas using deli meat and other nutritious power foods to fuel the right way. Make them beforehand, assemble on the spot, or get inspiration for a new kind of lunch staple!
My little ones love ‘picnic’ dinners. Those sweet boys think I’m the coolest mom in the world when I set a bunch of stuff on a tray and let them pick and choose in the driveway as we play until the sun goes down. Little do they know it’s actually my lazy mom dinner hack when I have absolutely no energy to cook anything.

6. Farmer’s Market Spicy Tuna Wraps with Homemade Chipotle Greek Yogurt Ranch
Easy, flavorful tuna wraps drizzled with light chipotle Greek yogurt ranch dressing. They’re the perfect summertime lunch and packed with delicious farmer’s market veggies.
Say hello to my new favorite lunch because I couldn’t believe how much I LOVED it. I’ve been on a pretty consistent, early morning workout routine as of late, which means by the time I’m thinking about lunch I want something quick, filling, and of course, delish.

5. Asian Chicken Salad Lettuce Wraps
But it does have to be nourishing and substantial enough to keep you going all. afternoon. long. And these Asian Chicken Salad Lettuce Wraps are just that. They come together quickly with precooked chicken (leftovers for the win!), bagged broccoli slaw and an 7-ingredient dressing that’s so good that you won’t be able to resist licking the spoon.
We love this sauce with almond butter but if you need a nut-free option or just want to change things up, tahini or sunflower seed butter (without added sugar) is equally amazing. We love options. Life is just to short to not enjoy all the options.

4. Roasted Vegetable Harvest Salad Bowl
Veggie bowl, harvest salad, Buddha bowl…no matter what you call this Roasted Vegetable Harvest Salad Bowl it’s a meal prep staple. Colorful, hearty, full of roasted vegetables and flavor. My mindset about my meals is all about being flexible, yet intentional — and a veggie-packed lunch bowl allows me to be more flexible with my other meals and snacks.
This roasted vegetable salad bowl is all about flexibility too. I love adding a variety of colorful roasted veggies to my bowl — rainbow carrots, baby broccoli, and root vegetables like squash and sweet potatoes. But ultimately you can use whatever vegetables you have on hand (fresh or frozen).

3. Easy Crockpot Chicken Fajitas
I personally like to make a double batch of these crockpot chicken fajitas on Sunday’s. They make the perfect lazy Sunday or game day meal. I store the leftovers in the freezer for an easy, weeknight dinner when I don’t feel like cooking. Also, my go-to for feeding a crowd on the weekends. To be honest, this isn’t a true ‘fajita’ recipe. It’s more of a ‘everything Mexican’ recipe. It tastes like an authentic Shredded Mexican Chicken dish which is what I love.
If you’ve shied away from meal prepping in the past because you get bored of eating the same meal again and again, this crockpot chicken fajita recipe is for you!

These Butternut Squash Buddha Bowls are the most colorful meal you’ll ever eat! They’re made with brown rice, crunchy chickpeas, roasted butternut squash, greens, avocado, and harissa sauce. Make a double batch of these bowls for a healthy and delicious meal prep recipe for the week! Buddha bowls have to be one of my all-time favorite meals to make. I feel like a Buddha bowl is like Whole Foods Hot Bar–> there are so many amazing things packed into one meal! I mean, who doesn’t love the Whole Foods Hot bar?
To me, a buddha bowl is a combination of veggies, protein, and whole grains, as well as a mixture of hot and cold ingredients. We talk all about the anatomy of the PERFECT buddha bowl later. If you’re interested in breaking down the Buddha bowl, we dive into different grains, roasted vegetables, and other fun ways to create your perfect Buddha bowl.

1. Lemon Chicken Soup with Orzo
The base is smooth, creamy, and velvety… without cream. But even though it’s creamy, it’s also still brothy enough to slurp, like any good Chicken Noodle-y type soup should be. It’s salty and rich from the chicken, but that punch of lemon is life-giving in a way that regular Chicken Noodle just can’t touch. And while most brothy soups leave you wanting a sandwich an hour later, this guy is chunky, with fresh vegetables, chicken, and whole wheat pasta, leaving you feeling like you just ate a real meal. Because you did.
Okay, it’s up to you if you want to eat pasta during Sugar Free January, but one of the things I love about DeLallo, a brand that we have worked with for years and years and years, is that they have whole wheat pasta in just about any shape you could ask for.
